研究成果总结


主要从事建立创新的策略以降低高温处理食品的健康风险。其中一些研究成果得到该领域专家的高度肯定,被国际美拉德反应学会(IMARS)选录为重要研究发现 (highlight articles)之一。在天然多酚对食品中有害物质形成的抑制作用和机理研究获得中国食品科学技术学会科技创新二等奖。其中一些研究成果得到国际媒体(例如NaturalNews 和FoodNavigator-USA)的关注。申请者在国际SCI权威期刊上发表学术论文50余数,(总 SCI 引用次数接近1200次,H-index:19),著作章节 4 篇(Taylor & Francis出版社)。其中11篇发表在一区期刊,两篇被评为ESI 高被引用论文。目前担任英国皇家化学学会期刊RCS Advances 的副主编,同时是多家国际学术期刊编委及多家国际学术期刊审稿人。
